Ocean Prime Offers Alaska Halibut Pairing for A Limited Time

Wild and pure halibut from Alaska is currently in-season and known for its firm yet flaky texture and delicate flavor. This particular presentation from Ocean Prime highlights a medley of seasonal ingredients including celery root purée, spring peas, asparagus, fava beans and buttered lobster claw, finished with lemon pesto vinaigrette. “The mix of spring vegetables complements the fish well, and the citrus-forward vinaigrette with the lobster elevates the entire dish,” says Ocean Prime Regional Chef Ian Rough. The entree is available for $51 at Ocean Prime Naples.
The Alaska Halibut pairs perfectly with Chardonnay from Cakebread Cellars (available by the bottle), a Napa Valley family winery. Ocean Prime Beverage Director Andrea Hoover selected Cakebread’s Chardonnay for its notes of fresh citrus, orange blossom and white peach and pear and apple lemon finish, playing off the flavors in the Alaska Halibut feature. “Chardonnay is weighty on the tongue, yet well-balanced with acidity, complementing the dynamic nature of this dish,” says Hoover.
